Organic Coconut Sugar

Also known as Coconut palm sugar, it is not to be confused with palm sugar, which is similar, but from a different type of palm tree.

Coconut sugar is made from the sap circulating through the coconut palm tree. The sap is collected from the flowers of tree and then dried to extract all the water. The end result is delicious butterscotch-like crystals that look very similar to brown sugar. It has been used a sweetener in Asia for thousands of years, where coconut palms grow in abundance.

The Philippine Dept for Agriculture have found that coconut sugar contains trace minerals including calcium, iron, phosphorous, potassium, zinc, plus antioxidants, amino acids, and vitamins B1, B2, B6, B13. They also found that coconut sugar has a GI of 35, when compared with pure glucose at 100, and regular white table sugar at 60. This is due to a type of fibre called inulin, that slows the absorption of the coconut sugar into the bloodstream, after consumption.
